Red chili sauce with both tomatlllos and tomatoes (last ripened of season), garlic, onions etal. ETA redux ready about 9:30pm.
Back left chilling. Salsa Chili Verde with yellow, Vidalia, and green onions. Will jar in hour.
Front right Roadkilled venison rump roast chunks in dark 5 mushroom reduction with garlic, ramps and black pepper. About 5 qts. Simmering until venison is tender/fall apart. That’s dinner. (For the week).
That deer squad that dove in front of a truck right by a farmer’s market meet. We’re begging us to stop, clean up and buy last veggies of the season.
I have 2 tenderloins and 2 mostly intact rib roasts packed in freezer. Along with leg meat marinating in jerky seasonings for making same later this week.
None of 4 hit my car, but the splash…
Gutting the roadkill was unnecessary. Just a bit of hosing down.
Thankfully it’s raining too. Feels like first in months.
So seeing Zed with deep pot made me smile a bit.
Now to sanitize salsa Verde y Rojo Mason jars and lids.
I’ll add raw heat to each when I jar and preserve them.
Not a Yuge venison fan anymore but I think that’s mostly due to prep which I don’t do anymore and is critical to do right in this heat, but damn does everything you just wrote about sound good!
If you are in The Fla I will go by and grab up Chris and bring him to dinner, fun!
